Sweet Potato Curry, with Almonds, Sultanas and Coconut

No need for a dessert if you have this lovely, creamy curry – it’s sweet enough.

You can add chicken in for meat lovers, but it is great without – and budget friendly. The only issue is where you get your protein from. One average chicken breast offers 70% of your daily value of protein. Spinach is also a good source of protein, but in this quantity will only give you around 3% of your daily value. This is also true for the yoghurt. If you are not adding meat to the curry, it is a good idea to ensure you get sufficient protein during the day by including things like salmon, tuna, beans, cheese, milk, eggs, nuts and seeds in your diet.

Before I begin with this marvellous recipe, I need to point out that actually courgette and aubergine are summer vegetables and are at their best during July and September. This means that you may pay more for these vegetables during the winter and they won’t taste as good. Try a leak and potato soup, a cauliflower soup, or carrot and coriander soup if you want your vegetables to be fully seasonal.

You would be forgiven for wanting to make this during the winter though, as it’s a real heart warmer, particularly with its spicy kick.
